Updating my own question as I've spoken to RT directly and their answer may help others in the future. The values I saw are the default values that are displayed when no signal is received. Connect one side of the fluid level switch to the DASH2 wire mentioned. Connect the other side of the fluid level switch to ground. When the fluid level is low the switch is closed and the DASH2 input is grounded to 0V. Hey presto.
