In my experience there is so much sloshing around of the fuel in a standard tank that the fuel sensor reading will be more or less useless when on track. You should be able to use a pair of off-the-shelf RS232 radio modems. The idea of these is to replace a physical RS232 wire via a wireless link. If the DTA provides a RS232 based asynchronous serial stream rather than the CAN based synchronous serial stream you gave in the original post then it is easily possible using a simple RS232 cable.
